Rosy Melba Peach Jam Recipe
If you thought jams needed a lot of time and effort and was just not possible, here's help. This easy and simple rosy melba peach jam makes it possible for you to combine your favorite fruits and now make jam right at home. Try it and do let me know how it turned out for you

Ingredients
| 1 1/2 lb. ripe peaches | ||
| Lemon juice | 1/4 Cup (16 tbs) | |
| 2 c. red raspberries | ||
| Sugar | 7 Cup (16 tbs) | |
| 1 bottle liquid fruit pectin | ||
| Almond extract | 1 Teaspoon | |
Directions
Peel, pit and crush peaches.
Measure 2 cups peaches; add 2 tablespoons lemon juice.
Stir gently; let stand.
Crush berries; add remaining lemon juice.
Combine peaches and berries with sugar in heavy kettle; mix well.
Bring to a full rolling boil, stirring constantly; boil for 1 minute.
Remove from heat; add pectin.
Stir and skim for several minutes; add extract.
Pour into hot sterilized glasses.
Seal with paraffin.
