Ingredients
1 quart white wine vinegar
1 shallot, peeled and halved
1 to 2 large sprigs fresh rosemary
6 black peppercorns
Directions
In a stainless steel or enameled saucepan bring the vinegar to a simmer.
Pour it into a sterilized bottle or jar and add the rosemary, shallot and peppercorns.
Seal and store in a cool, dark place for at least 2 weeks before serving.
Before presenting as a gift, strain and add fresh herbs to the bottle.
