Strain "herb brew" through a fine sieve or cheesecloth into a large saucepan.
Add the sugar, vinegar, and food coloring.
Stir over medium heat until sugar is dissolved; increase heat and bring mixture to boiling.
Add pectin, bring to boiling, and boil rapidly 1 minute, stirring constantly.
Remove from heat; skim off foam.
Pour into hot sterilized glasses; seal with melted paraffin
