Rosemary Roasted Pork Tenderloin with Sweet Potatoes and Pears Recipe Video

Directions
GETTING READY
1. Preheat the oven to 450 degree F.
2. Grease a roasting pan or an oven-proof casserole with olive oil and place.
MAKING
3. In a small bowl, combine the herbs and seasonings.
4. Coat the pork with oil and season with half the herb mixture.
5. Toss the sweet potatoes, pear and onion wedges with oil and remaining herb seasoning until well coated.
6. Place pork in the pan or casserole and surround with the vegetables.
7. Roast in the oven for about 30 minutes, stirring the vegetables and pears gently, once or twice during roasting. Cook until the pork and vegetables are tender. The internal temperature of the pork should read 165 degree F on a meat thermometer, inserted in the center of the tenderloin.
SERVING
8. Cut pork into 1/2 inch thick slices.
9. Garnish with fresh sage leaves if you like.
10. Serve with the vegetables on the side.
