GETTING READY
1. Preheat the oven to 450 degree F.
2. Grease a roasting pan or an oven-proof casserole with olive oil and place.

MAKING
3. In a small bowl, combine the herbs and seasonings.
4. Coat the pork with oil and season with half the herb mixture.
5. Toss the sweet potatoes, pear and onion wedges with oil and remaining herb seasoning until well coated.
6. Place pork in the pan or casserole and surround with the vegetables.
7. Roast in the oven for about 30 minutes, stirring the vegetables and pears gently, once or twice during roasting. Cook until the pork and vegetables are tender. The internal temperature of the pork should read 165 degree F on a meat thermometer, inserted in the center of the tenderloin.

10. Serve with the vegetables on the side.

Editors Review

What tastes better than rosemary with pork? The flavor of rosemary does extraordinary things to a juicy pork tenderloin roast. Add some sweet potatoes, pears and onions, roasted with sage and rosemary and you have a winner on that table. This recipe by Chef Binks is not only very healthy but truly delicious; the tender pork also picks up a slightly sweet taste from the sweet potatoes, pears and onions. Try this classic combination when you are in the mood for a simply sensational meal.
