1 lb (455 g) baby red potatoes
 
1 lb (455 g) carrots, peeled
 
4 chicken breasts, skin removed
 
1/2 cup (120 ml) lemon juice
 
1 tsp (5 ml) lemon peel, finely grated
 
2 tbs (30 ml) honey
 
2 tbs (30 ml) vegetable oil
 
2 tbs (30 ml) Fresh Rosemary, leaves chopped

Directions

Parboil potatoes and carrots about 5 minutes.
Rinse in cool water, drain and set aside.
Marinate chicken in rest of ingredients for 30 minutes to several hours.
Cover and bake at 375°F (190°C) for 30 minutes.
Remove cover, add potatoes and carrots and bake for another 20 minutes.
