Ingredients

 
3 1/2-4 cups flour
 
1/2 tablespoon active dry yeast
 
1/2 teaspoon grated lemon or orange peel
 
2/3 cup milk
 
4 tablespoons unsalted butter
 
1/4 cup sugar
 
1/2 teaspoon salt
 
2 eggs
 
Filling
 
1/3 cup water
 
1/3 cup sugar
 
1 cup finely ground almonds
 
1/2 teaspoon grated lemon or orange peel
 
1/2 teaspoon ground cinnamon
 
Glaze
 
1 egg, beaten with 2 tablespoons milk

Directions

1 Combine 2 cups flour, yeast, and lemon or orange peel in mixing bowl. Heat milk, butter, sugar, and salt to hot (120°-130°F).
2 Add milk mixture and eggs to dry ingredients. Mix thoroughly.
3 Add enough remaining flour to form a soft dough. Knead on lightly floured surface until smooth€”about 10 minutes.
4 Place in greased bowl, turning to coat top. Cover; let rise in warm place until double€”about 1 hour.
5 Punch down dough. Divide dough into 3 equal pieces. Roll each into 7 x 16-inch rectangle.
6 Use 1/3 of filling on each rectangle; roll up jelly-roll style. Seal seam and ends. Braid; place on greased baking sheet.
7 Cover; let rise in warm place until double€”about 30 minutes. Make glaze and brush on loaf.
8 Bake in a preheated 350°F oven for 40 minutes or until done. Cool on wire rack.
