Ingredients
| All purpose flour | 1 1/3 Cup (16 tbs) | |
| Granulated Sugar | 3/4 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cereal | 2/3 Cup (16 tbs) | |
| Nuts | 1/2 Cup (16 tbs), chopped | |
| Bananas | 1 Cup (16 tbs), mashed | |
| Skim milk | 1/2 Cup (16 tbs) | |
| Vegetable oil | 1/3 Cup (16 tbs) | |
| 3 egg whites or 2 whole eggs | ||
| Lemon juice | 1 Tablespoon | |
Directions
In large bowl mix flour, sugar, baking powder, salt, cereal and nuts.
In small bowl, combine remaining ingredients; beat with fork to mix.
Add to dry ingredients and stir just until blended.
Bake in greased 9x5x3-inch loaf pan at 350°F (180°C) for about 50 minutes or until pick inserted in center comes out clean.
Cool 5 minutes.
Remove from pan.
Cool completely on rack.
