Romaine Salad With Avocado Dressing Recipe
Ingredients
| 1/3 cup unsweetened grapefruit juice | ||
| Water | 1/4 Cup (16 tbs) | |
| 1 tablespoon no-oil Italian dressing mix | ||
| Vegetable oil | 2 Teaspoon | |
| 1/4 cup mashed ripe avocado | ||
| Romaine lettuce | 8 Cup (16 tbs), shredded | |
| 1 cup julienne-cut sweet red pepper | ||
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
Combine first 4 ingredients in a small jar; cover tightly, and shake vigorously to blend.
Add avocado; cover and shake well.
Chill thoroughly.
Combine lettuce and pepper strips in a large bowl; drizzle avocado mixture over salad, and toss gently.
Place 1 cup lettuce mixture on each individual salad plate, and sprinkle servings evenly with cheese.
