| Lemon curd - 1/4 cup | ||

| Romaine lettuce - 2 hearts | ||

Directions
GETTING READY
1) Slice the each romaine heart into quarters and trim the cores at end.
2) Cut the tomatoes in halves.
MAKING
3) In microwave, heat the lemon curd for 15 minutes.
4) Remove it from microwave, add vinegar and whisk thoroughly.
5) Let the mixture to cool for 2 minutes.
6) Add olive oil to the vinegar mix in slow stream.
7) Season the vinagrette with salt and pepper.
FINALIZING
8) In each salad plate, place 2 romaine quarters.
9) Place the tomato halves on the edges of the plate as garnish.
10) Drizzle the vinaigrette over roamine and tomatoes.
