Rolled Oats Muffins Recipe
This Rolled Oats Muffins recipe is a delicious keeper and always a plus in my cookbook! This Rolled Oats Muffins, when served as a Snack will always bring cheer to your table. I am sure both of us will be in agreement that this Rolled Oats Muffins is very delectable.
Ingredients
2 cups rolled oats
1 1/2 cups sour milk or buttermilk
1/3 cup melted butter (or peanut oil)
1/3 cup white sugar OR 1/2 cup brown sugar
1 egg, well beaten
1 tsp. soda
1/2 tsp. salt
1 cup unsifted all purpose flour
1/2 cup raisins or cut dates
Directions
Mix rolled oats and sour milk or buttermilk thoroughly and allow to stand overnight.
In the morning, add the remaining ingredients.
Bake in oiled muffin tins at 350 to 375F 20 minutes.
Makes 18 good sized muffins.
Sometimes I use whole wheat flour in place of white.
