Rolled Flounder Fillets Recipe

Directions
Skin fillets.
Season fish with salt and pepper.
Place a Swiss cheese strip on each fillet.
Roll the fillet around cheese.
Fasten with wooden picks or tie securely.
Place rolled fillets in shallow baking pan.
Combine chicken broth and lemon juice; pour over fish.
Sprinkle fish with paprika.
Bake, covered, at 350° till fish flakes easily when tested with a fork, 20 to 25 minutes.
Transfer fish to warm platter.
Pour sauce from baking pan into small saucepan.
Thoroughly blend flour and cold milk.
Stir into liquid in saucepan; cook and stir till mixture is thickened and bubbly.
Stir a small amount of hot mixture into egg; return to hot mixture.
Cook and stir 1 minute longer.
Spoon some sauce over fish.
Sprinkle with toasted almonds.
Pass remaining sauce.
