Ingredients
| Onions | 2 , chopped | |
| Salt | 3/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 1 teaspoon crumbled dried sage or thyme | ||
| 2 tablespoons cooking oil or other fat | ||
| 1 1/2 cups fine bread crumbs | ||
| Few celery leaves or parsley sprig, minced | ||
| 1 flank steak (2 to 3 pounds) | ||
Directions
Saute the onions with seasonings in hot fat for 2 to 3 minutes.
Add bread crumbs and celery leaves.
Mix thoroughly.
Pound flank steak with a mallet or wooden potato masher.
Spread stuffing on meat.
Roll meat lengthwise and tie securely in 4 or 5 places.
Place it on a rack in a baking pan.
Roast in preheated moderate oven (300°F.) for 2 1/2 hours.
Serve on hot platter.
Remove strings and carve diagonally across the grain of the meat.
Glazed carrot slices make a good vegetable garnish for this dish.
