Rolled Slices Of Beef In Cream Recipe
Ingredients
| Anchovies | 1/4 pound | |
| Parsley sprigs | 3 | |
| 1 medium-sized onion | ||
| Garlic | 1 Clove (5gm) | |
| 1 1/2 pounds filet of beef, cut into 4 slices | ||
| Butter | 4 Tablespoon | |
| 2 cups hot veal stock or beef stock | ||
| Pepper | 1/2 Teaspoon | |
| Cream | 3/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
Directions
Bone anchovies (use less if boned anchovies are used).
Chop the parsley and onion very fine and crush the garlic clove.
Mash these ingredients to a paste.
Spread the anchovy mixture on beef slices.
Roll these slices and tie together.
Put butter into iron pot over medium heat.
When hot, place the rolled slices of beef in the pot.
Brown lightly on all sides, add the hot veal or beef stock, add pepper, and simmer over low flame for 1 hour.
After 45 minutes, add cream mixed with lemon juice.
Cook 15 minutes longer.
Remove the strings, and serve.
