Rolled Leg Of Lamb Boulangere Recipe

Ingredients
4 1/2 lb (2 kg) leg of lamb
Salt and pepper
Pinch of thyme
2 tbsp (30 ml) oil
2 tbsp (30 ml) butter
2 Cups (500 ml) onions,sliced
3 Cups (750 ml) potatoes,sliced
2 Cups (500 ml) chicken stock or consomme
1/2 Cup (125 ml) chopped parsley
Directions
– Preheat oven to 425 °F (220 °C).
– Bone and tie leg of lamb and season with salt, pepper and thyme.
– In an oven-proof casserole, heat oil, melt butter and sear leg of lamb.
– Reduce oven heat to 350 °F (175 °C) and cook for approximately 30 minutes.
– Add onions and potatoes, then pour stock over mixture, adjust seasoning, bring to a boil and cook for another 30 minutes.
– When cooked, carve leg of lamb into thin slices. Sprinkle parsley over potatoes and adjust seasoning.
