Rolled Chicken Breasts Florentine Recipe
Rolled chicken breasts florentine is a ham and cheese filled chicken roll. Prepared in the microwave, the rolled chicken breasts florentine is herbed with thyme and cooked with mushroom or chicken soup for flavor. With spinach in the filling apart from the ham and cheese, the rolled chicken breasts florentine is quite filling and delectable.
Ingredients
4 skinless boneless chicken breast halves (about 1 pound)
4 thin slices (1 ounce each) cooked ham
4 thin slices (1 ounce each) Swiss cheese
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1 can (10 3/4 ounces) Condensed Golden Mushroom or Cream of Chicken Soup
1/3 cup water
1/4 cup sliced green onions
1/8 teaspoon dried thyme leaves, crushed
Directions
With flat side of meat mallet, pound chicken to 1/4-inch thickness.
Place a ham slice, cheese slice and 1/4 of the spinach on each chicken piece.
Roll up chicken from short end, jelly-roll fashion.
Secure with wooden toothpicks if needed.
Place chicken, seam side down, in 12- by 8-inch microwave-safe baking dish.
Cover with vented plastic wrap; microwave on HIGH 5 minutes.
In small bowl, stir soup until smooth; stir in water, onions and thyme.
Pour over chicken.
Cover; microwave on HIGH 10 minutes or until chicken is fork-tender, rotating dish once during cooking.
Let stand, covered, 5 minutes.
