Rogan Josh Recipe
Ingredients
500 gms. mutton
1 teaspoon turmeric powder
1 ginger, chopped
1/2 teaspoon caraway seed and cardamom powder
2 tomatoes
3 bay leaves
10 tablespoons ghee
1 1/2 teaspoons coriander powder
Salt
Grind together:
3 onions
3 cloves
3 green chillies
1 big cardamom
4 garlic cloves
1 teaspoon cumin seed
1/2 ginger
1 red chilli, soaked
1 cinnamon
Directions
Cut the mutton into large pieces and boil it in four cups of water, along with the salt and ginger.
Remove from the fire before the meat is quite cooked.
Heat ghee and lightly fry all the other ingredients.
After ten minutes, add the boiled meat with one cup of stock.
Cook, for about ten minutes or till the meat becomes tender.
