Rocky Road Ice Cream Recipe
Ingredients
| Instant chocolate pudding mix package | 1 | |
| Sugar | 2 Tablespoon | |
| 1 cup fat-free milk | ||
| Evaporated milk | 1 Can (10oz), skimmed | |
| Miniature marshmallows | 3/4 Cup (16 tbs) | |
| Semi-sweet chocolate | 1/2 Cup (16 tbs) | |
| 1/4 cup coarsely chopped unsalted dry roasted peanuts | ||
Directions
Combine pudding mix and sugar in a large bowl.
Gradually add fat-free milk and evaporated milk, stirring with a wire whisk until smooth.
Stir in marshmallows, chocolate morsels, and peanuts.
Pour chocolate mixture into freezer can of a 2-quart hand-turned or electric freezer.
Freeze according to manufacturer's instructions.
Pack freezer with additional ice and rock salt, and let stand at least 1 hour before serving.
