Ingredients

 Sweet potatoes3
 Bacon strip6 , diced
 Red onion1/2 Small, finley diced
 Spinach leaves1 Cup (16 tbs), finley diced
 Precooked chicken2 Cup (16 tbs), finely shredded
 Paprika1 Teaspoon
 Sprinkle of cinnamon
 Black pepper1 To taste

Directions

1) Preheat oven to 375°.

2) Wash and dry the sweet potatoes and bake in the preheated oven for 45 minutes or until soft all the way through.
Kid Job: Kids can do the washing and the drying of the sweet potatoes!

3) Sauté the diced bacon until crisp and pour off half of the bacon grease. Add the red onion to the bacon and cook the onion until translucent. Add the remaining ingredients and cook for
another 3–4 minutes.


4) Cut the baked sweet potatoes in half lengthwise and fluff the inside of each half with a fork. Pile each sweet potato half with large spoonfuls of the chicken mixture. Serve and enjoy.
One half-potato with chicken mixture equals one serving.
Kid Job:An older child can help you fluff up the inside of the potatoes with a folk and scoop a pile of the chicken mixture on top!
