Rockfish Muddle Recipe

Ingredients

 Rockfish5 Pound
 Salt pork1 pound, diced
 Onions3 Large
 Tomatoes3 1/2 Cup (16 tbs)
 Salt, red and black pepper
 1/2 pound unsalted plain crackers, crumbled
 Eggs12 Small, beaten
 Butter1 Cup (16 tbs)

Directions

Simmer fish in water to cover for 10 minutes.
Drain; reserve broth.
Remove bones from fish.
Brown salt pork, add sliced onions, and saute until golden.
Pour off fat.
Put fish, salt pork, onions, and broth into kettle.
Add tomatoes.
Cook, covered, over low heat for 30 minutes or longer.
Season to taste.
Stir vigorously while adding crackers, eggs, and butter.
Simmer for 2 to 3 minutes longer.

You challenged me to find a ROCK FISH MUDDLE. There are other recipies, including North Caroline Rock Fish Muddle. I used "Recipe Rock Fish Muddle" for my search. This appears to be a faster version than your father's recipe. Anna Andrews
