Ingredients

 
1 can (6 oz.) frozen orange juice concentrate, undiluted
 
1/4 cup lemon juice
 
1/2 teaspoon dry mustard
 
1/4 teaspoon rosemary
 
1/2 teaspoon celery salt
 
1/2 teaspoon onion powder
 
1/2 teaspoon salt
 
1/4 teaspoon Angostura bitters
 
1/2 cup butter or margarine
 
12 frozen South African rock lobster tails (2 pkgs., 1 1/2 lbs. each)

Directions

For sauce, combine all ingredients except butter and lobster in a saucepan; heat slowly, stirring constantly, until mixture comes to a boil; boil 1 minute.
When ready to grill, melt butter in a small saucepan over fire; add sauce, stirring to blend thoroughly; use to brush rock lobster tails during grilling and serve remaining sauce for dipping.
Let frozen rock lobster tails thaw gradually; when ready to cook, slit thin underside membrane down center and peel open; insert tails on long skewers.
(If tails are cooked flat on grill, prevent curling by bending tails backward to crack sharply in several places.) Grill tails, shell side down, about 4 inches from coals 5 minutes, brushing occasionally with butter sauce; turn tails and grill 5 minutes longer, or until meat is opaque and creamy white.
