Rock Lobster Tails Superb Recipe
Ingredients
4 frozen South African rock lobster tails (8 oz. each)
1/2 cup cooking or salad oil
2 tablespoons soy sauce
1 tablespoon minced onion
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dry mustard
1 teaspoon ground ginger
1 clove garlic, crushed
Directions
Drop lobster tails into boiling salted water to cover.
Bring to boiling, lower heat, and simmer about 5 minutes, or until just tender and opaque.
Drain and cool.
Using scissors, cut through center of bony membrane and remove meat from shell in one piece.
Combine remaining ingredients for marinade; pour over lobster tails in a shallow dish; cover and refrigerate about 3 hours, turning occasionally.
Remove lobster tails from marinade and thread each one on an 8-inch skewer.
Grill about 3 inches from coals until light golden in color and thoroughly heated, brushing frequently with marinade.
