Rock Lobster Quiche Recipe
Ingredients
| 6 (4 ounce) South African rock lobster tails | ||
| Milk | 2 Cup (16 tbs) | |
| Eggs | 3 | |
| Egg yolks | 2 | |
| Flour | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Dry mustard | 1/2 Teaspoon | |
| Butter | 1 Tablespoon | |

Directions
GETTING READY
1. Preheat oven to 375°F before baking.
MAKING
2. Add South African rock lobster tails to boiling salted water, parboil and then cook for 1 minute after water starts boiling again. Drain instantly and using cold water drench them. Take out the meat and finely shred or grind them.
3. Prepare the pastry and roll out into just 1/8 inch thick. Using a cookie cutter or glass, cut the rolled out pastry dough into shapes that will sit into the tart pans. Take the 2-bite tartlet pans, grease slightly and line with the dough. Even the edges and apply a coat of unbeaten egg yolk.
4. Beat egg yolks, egg, milk, seasonings and flour to blend well. Stir in golden brown melted butter and then add the shredded or ground meat.
5. Arrange the mixture evenly into tart pans and bake for 25 minutes.
6. Take out from the pans and transfer to a hot tray. Keep warm till served.
