Ingredients

 1 Rock Cornish game hen, cut in half, and giblets if desired
 Butter/Margarine4 Tablespoon
 Rice1/2 Cup (16 tbs), uncooked
 Mushrooms1 Can (10oz)
 Peas1 Cup (16 tbs), frozen
 1 1/4 cups chicken broth, or 3/4 cup chicken broth and 1/2 cup light cream
 Salt1/2 Teaspoon
 2 or 3 tablespoons red wine

Directions

Saute game hen in butter until lightly browned (cook cut side first, then skin side); set aside.
Add to butter the rice, mushrooms and liquid, peas, broth, and salt.
Pour into casserole and place hen halves on top.
Cover and bake in a moderate oven (350°) for 30 to 40 minutes or until rice is cooked.
Pour red wine over all and serve.
