Rock Cornish Game Hen With Pilaf Recipe
Ingredients
| 1 Rock Cornish game hen, cut in half, and giblets if desired | ||
| Butter/Margarine | 4 Tablespoon | |
| Rice | 1/2 Cup (16 tbs), uncooked | |
| Mushrooms | 1 Can (10oz) | |
| Peas | 1 Cup (16 tbs), frozen | |
| 1 1/4 cups chicken broth, or 3/4 cup chicken broth and 1/2 cup light cream | ||
| Salt | 1/2 Teaspoon | |
| 2 or 3 tablespoons red wine | ||
Directions
Saute game hen in butter until lightly browned (cook cut side first, then skin side); set aside.
Add to butter the rice, mushrooms and liquid, peas, broth, and salt.
Pour into casserole and place hen halves on top.
Cover and bake in a moderate oven (350°) for 30 to 40 minutes or until rice is cooked.
Pour red wine over all and serve.
Makes 2 servings.
