Rock Cakes Recipe
Ingredients
| 250 g/8 oz self-raising flour | ||
| 125 gl4 oz butter, or a mixture of butter and lard | ||
| 90 g/3 oz caster sugar | ||
| 90 g/3 oz currants or mixed dried fruit | ||
| 1 egg, beaten with a pinch of salt | ||
| Milk to mix | ||
Directions
Sift the flour into a large bowl and rub in the fat until it resembles coarse breadcrumbs.
Add the sugar and fruit; then stir in the beaten egg and just a little milk in order to give a very stiff dough.
Put rocky heaps of the mixture on to a greased baking-sheet and bake at 200°C/400°F/ Gas Mark 6 for about 15 minutes.
