Hello. I'm Scott Popovic, Corporate Chef here at Certified Angus Beef. In this episode, we're going to talk about roasting. We'll start with an English chuck roast, which I'm going to season heavily with some salt and some freshly ground black pepper. I season both sides from high above to allow for even distribution of the seasoning. When I place the roast onto a wire roasting rack, fat side up, and place that rack into a preheated 500 degree oven. I'm going to insert an oven proof thermometer into the thickest part of the roast. After about 15 minutes, I'm going to reduce the temperature to 275 and continue to roast until desired doneness. I prefer mine at medium rare to medium. I removed the roast from the oven, I want to [tin] it with some aluminum foil and allow it to rest for 10 to 15 minutes. Now you're ready to slice and serve the roast. You always want to slice against the grain. Enjoy.
