 Green onion/Shallot1 1⁄2 , chopped
 Balsamic vinegar2 Tablespoon
 Olive oil2 Tablespoon
 Dijon mustard1 Teaspoon
 Black pepper To Taste

Directions

GETTING READY
1. Pre-heat the oven to 400F.
2. Line a baking tray with aluminium foil.

MAKING
3. Arrange the asparagus on the baking tray lined with aluminium foil.
4. In a bowl, place all other ingredients, using a whisk, mix them together.
5. Pour the mixture onto the asparagus, using your hands, toss to coat the asparagus completely with the mixture.
6. Bake at 400F for 15 to 20 minutes.

SERVING
7. Serve hot with your favorite dip.

Asparagus are excellent source of Vitamin K, Vitamin A, iron and many more. Asparagus can be a tasty and low fat side dish for the health conscious. Chef Tina has got some fresh asparagus and roasting them in some heart healthy olive oil. Definitely a recommended dish on the sides for roasted meat.
