Ingredients
salad:
1 bunch red beets, about 3-4 medium, with tops
1 bunch golden beets
1 lb thin asparagus
1 Tbs olive oil
1 tsp sea salt
1 head garlic
dressing:
1/4 cup olive oil
1/4 cup fresh orange juice
1 Tbs dried minced onion
2 Tbs balsamic vinegar
salt and pepper
Directions
Wash beets, and trim tops to 1" above beet top Roast beets, colors separately, wrapped in aluminum foil loosely but completely add garlic cloves, unpeeled to beets, and roast 1 hour.
Snap ends off asparagus and place on a baking sheet, roll in 1 Tbs olive oil to coat
sprinkle with 1 tsp salt. Roast in 450F oven for 10-12 mins.
Combine soft roasted garlic (no skins) and mash with 1/4 cup olive oil, balsamic vinegar, orange juice, onion and
salt and pepper. whisk to blend
Slice and dice beets, keep colors separate, combine each veggie with 2 TBS dressing and marinate. Plate up together.

This is wonderful! Love the colours and flavours. Can't wait to make this with veggies from my garden. It's almost time to plant here in California! I do have golden and chiogga beets, carrots, and lettuce growing in my garden now, onions and garlic are growing but won't be ready until June.
Roasted garlic with orange juice is wonderful on the beets-yummy. Great dressing olive oil and balsamic. This is a great dressing for a green tossed salad as well.
Do you peel the asparagus?
Just bought some asparagus today - only $1.49 a pound so yummy.
Roasted veggies taste so yummy! This is a great and healthy recipe.
