Roasted Red Pepper And Cheese Bites Recipe
Ingredients
2 sweet red peppers 2
1 tbsp olive oil 15 mL
1/2 tsp crushed black peppercorns 2 mL
3 oz mozzarella or Asiago cheese, cut in 1/2 inch (1 cm) cubes 90 g
Directions
Broil peppers 4 to 6 inches (10 to 15 cm) from heat, turning often, for 15 to 20 minutes or until charred.
Let cool slightly.
Peel and seed; cut pepper lengthwise into 1/2 inch (1 cm) wide strips.
Place in bowl and toss with oil and pepper.
Wrap 1 pepper strip around each cheese cube and secure with toothpick.
Serve immediately.
(Cheese bites can be covered and refrigerated for up to 8 hours.)
