Ingredients

 
Roast bell pepper
 
Chopped garlic

Directions

Roast bell pepper on low flame so it takes longer to roast. The longer it takes, the bell pepper will be more sweet.
After baking wrap in a plastic bag and let it sit for 5 minutes, this will enable easy peeling of skin.
Then, peel the skin out.
Chop the roasted bell pepper and keep in a bowl.
Add chopped garlic, roasted tomatoes and some artichoke hearts.
pour a little balsamic vinegar or red wine vinegar and some olive oil.
Mix and roast or marinate for 1 or 2 hours.
Serve over bruschetta with some goat cheese.
