Recipe Story
I was having Tina over for dinner and decided to make one of my favorite dishes. It wasn't as good as my grandmothers, but it was pretty dang good... Roasting a chicken is very easy to do, so give this one a try...

Ingredients
Potatoes - 10 or so, washed and sliced
Directions
GETTING READY
1 Preheat the oven to 400 degrees F
2 Wash the potatoes and wipe them dry.
3 Cut them into slices.
MAKING
4 In a large ovenproof dish, put the sliced potatoes.
5 Sprinkle some olive oil, Greek seasoning, Oregano, salt and pepper on the potatoes.
6 Mix well so that the potatoes are evenly coated.
7 Place the roasting chicken on the potatoes and put some garlic cloves in the cavity.
8 Squeeze the lemon juice on the chicken and put the squeezed lemons in the cavity as well.
9 Sprinkle the chicken with a generous pinch of Greek seasoning, Oregano and salt and pepper to taste.
10 Place the chicken in the oven and let roast for about 2 hours.
SERVING
11 Carve and serve the chicken along with the potatoes.
