Ingredients

 
1 3-to-4-lb (1.5-2 kg) boned and rolled loin roast
 
3 tbsp (50 mL) bacon fat or margarine
 
1 tsp (5 mL) dry mustard
 
1 garlic clove, minced
 
1/4 tsp (1 mL) black pepper
 
1 tsp (5 mL) savory or sage
 
6 potatoes
 
1 tsp (5 mL) coarse salt

Directions

Cream together the bacon fat or margarine, mustard, garlic, black pepper, savory or sage.
Spread on top of roast.
If you have a combination microwave-convection oven, place a rack in the oven ceramic tray with a pie plate under the rack.
Set roast on rack, insert probe in top of oven and in meat.
Select the appropriate cooking cycle by reading your oven manual.
The oven decides the cooking period.
Let stand 15 minutes, covered.
Rub potatoes with a little fat, then roll in coarse salt.
Arrange in a microwaveable plate and cook by selecting the appropriate cooking cycle by reading your oven manual. (jacket potatoes)
Place the potatoes around the roast on a platter.

Hi Tom, this recipe is for cooking the lamb in the microwave oven and since each make or microwave oven has different settings and a user manual, one would have to check how to use the roast or grill function in the manual. You would also have to set the weight of the lamb for the microwave oven to know how long to cook it. This method definitely saves you time as compared to roasting lamb in the conventional oven.
