Roasted Tomato And Mozzarella Pasta Salad Recipe
Roasted tomato and mozarella pasta salad is a lovely vegetable pasta salad. Made with fresh roasted tomatoes, bell peppers and mozarella cheese cubes that melt in your mouth, I prefer this pasta salad made with rotelle pasta. Dressed with red wine vinaigrette and seasoned to taste, it is a great side for any meal.
Ingredients
| Corkscrew pasta | 3 Cup (16 tbs), uncooked | |
| 1 cup coarsely chopped green bell pepper | ||
| 4 ounces mozzarella cheese, cut into 1/2-inch cubes | ||
| 1/4 cup chopped sweet red onion | ||
| Salt | 1/2 Teaspoon | |
| Ground black pepper | 1/4 Teaspoon | |
| 1/3 cup bottled red wine vinaigrette salad dressing | ||
Directions
Cook pasta according to package directions; rinse and drain.
Place in large bowl.
Cut Roasted Fresh Tomatoes into chunks; add to pasta along with green pepper, mozzarella cheese, onion, salt and black pepper.
Add salad dressing; toss to coat.
