Ingredients

 8 Roma tomatoes (about 1 pound), blackened
 1 small serrano chile, blackened, finely minced, with seeds
 1 orange, peeled, seeded, and cut into sections
 3 tablespoons loosely packed chopped mint leaves
 Extra virgin olive oil1 Tablespoon
 Orange juice2 Tablespoon
 1 heaping tablespoon minced orange zest
 Sugar1 Teaspoon
 Salt1/2 Teaspoon

Directions

Cut the tomatoes in half and squeeze out and discard the seeds and juice.
