Seeds from 1 butternut squash
 
2 teaspoons olive oil or butter
 
Salt

Directions

1. To clean the seeds, discard the membranes and rinse. Air-dry the seeds on a towel for a couple of hours or on a cookie sheet in an oven at 200° F. for 20 minutes.
2. Heat 2 teaspoons olive oil or butter in a large nonstick skillet. Add seeds and cook over medium heat until they start to turn golden.
3. Season with salt and serve on the side with the chicken.
