| Coarse sea salt - 3 oz 75g | ||
Directions
MAKING
1. Place a large wok or heavy frying-pan on heat till the pan is heated through.
2. Then add the peppercorns and the salt and stir-fry till the mixture starts to smoke very gently. Remove the pan from the heat and let the mixture cool
3. In a coffee grinder or a clean coffee mill or mortar and pestle, mash the powder till fine
SERVING
4. Seal the mixture in a spice jar for use with dishes
