Roasted Red Pepper Salad Recipe
Ingredients
| 1 7-ounce jar roasted sweet red peppers, drained and cut into 1/2 inch strips | ||
| Stalk celery | 1 , sliced | |
| 2 tablespoons olive or salad oil | ||
| Wine vinegar | 2 Tablespoon | |
| Parsley | 1 Teaspoon, chopped | |
| Capers | 1 Teaspoon, drained | |
| Sugar | 3/4 Teaspoon | |
| Thyme leaves | 1/8 Teaspoon | |
| Lettuce leaves | ||
Directions
1.In medium-sized bowl, combine peppers and remaining ingredients except lettuce leaves, tossing to mix well. Line plate with lettuce leaves; spoon pepper mixture onto lettuce.
