 1 7-ounce jar roasted sweet red peppers, drained and cut into 1/2 inch strips
 Stalk celery1 , sliced
 2 tablespoons olive or salad oil
 Wine vinegar2 Tablespoon
 Parsley1 Teaspoon, chopped
 Capers1 Teaspoon, drained
 Sugar3/4 Teaspoon
 Thyme leaves1/8 Teaspoon
 Lettuce leaves

Directions

1.In medium-sized bowl, combine peppers and remaining ingredients except lettuce leaves, tossing to mix well. Line plate with lettuce leaves; spoon pepper mixture onto lettuce.
