Ingredients

 1 large red onion, sliced,or 4 shallots
 Red bell pepper1 To taste, sliced
 Yellow squash1 , sliced
 1 zucchini, sliced diagonally, if desired
 Cherry tomatoes2 Cup (16 tbs)
 Garlic8 Clove (5gm), unpeeled
 1 teaspoon dried thyme, basil, or rosemary
 Kosher salt1/2 Teaspoon
 Black pepper1/4 Teaspoon
 Olive oil1 Tablespoon
 Balsamic vinegar2 Tablespoon

Directions

1. Preheat oven to 400° F.
2. Put all the ingredients, except for the balsamic vinegar, together in a baking pan and bake for about 1 hour.
3. When finished cooking, remove vegetables from the oven and place them in a serving dish. Sprinkle with the balsamic vinegar.
