Roasted Garlic Potatoes Recipe
Ingredients
1 3/4 pounds baking potatoes, peeled and cut into 1-inch cubes
3 tablespoons lemon juice
1 teaspoon olive oil
1/2 teaspoon salt
4 garlic cloves, minced
Vegetable cooking spray
Directions
Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl; toss well to coat.
Let stand 10 minutes.
Spoon potato mixture into an 11 x 7-inch baking dish coated with cooking spray.
Bake at 425° for 35 minutes or until potatoes are tender and lightly browned, stirring occasionally.
