Roasted Dill Chicken Recipe
Roasted dill chicken is a herbed and flavorful chicken recipe. Easy to prepare, the dill chicken is prepared with a pureed mix of shallots with dill and Italian dressing, spread in the cavity and on both layeres of the skin. Covered with a foil, the chicken is cooked along with chunky pieces of potatoes to doneness.
Ingredients
1/2 cup Italian Dressing
1 cup loosely packed snipped fresh dill
1/2 cup coarsely chopped shallots or onions
1/2 teaspoon salt
1/4 teaspoon pepper
1 (5- to 5 1/2-pound) roasting chicken
2 pounds all-purpose potatoes, cut into chunks
Directions
Preheat oven to 375°.
In food processor or blender, process Italian dressing, dill, shallots, salt and pepper until blended.
In roasting pan, on rack, place chicken; spread dill mixture inside cavity, then under and over skin.
Close cavity with skewers or wooden toothpicks; tie legs together with string.
Arrange potatoes around chicken.
Loosely cover with heavy-duty aluminum foil, then roast 1 1/2 hours, turning potatoes occasionally.
Remove foil and continue roasting 15 minutes or until meat thermometer reaches 185° and potatoes are done.
