Roasted Bell Pepper Quesadillas Recipe
Ingredients
| Lean ground beef | 1/2 Pound | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Ground black pepper | 1 To taste | |
| Provolone cheese | 1 Cup (16 tbs), shredded | |
| 8 (6-inch) extra-thin corn tortillas | ||
| Bell pepper | 1/2 Cup (16 tbs), roasted | |
| Cilantro | 1/4 Cup (16 tbs), chopped | |
| Salt | To Taste | |
Directions
Brown ground beef in medium skillet.
Drain.
Add onions; cook until tender.
Season with salt and pepper to taste.
Sprinkle 2 tablespoons cheese onto each of four tortillas; cover with ground beef mixture, pepper strips, cilantro and remaining cheese.
Top with remaining tortillas.
Cook, in batches, in nonstick skillet over medium heat about 4 minutes or until cheese is melted, carefully turning after 2 minutes.
Drain.
