 Lean ground beef1/2 Pound
 Onion1/4 Cup (16 tbs), chopped
 Ground black pepper1 To taste
 Provolone cheese1 Cup (16 tbs), shredded
 8 (6-inch) extra-thin corn tortillas
 Bell pepper1/2 Cup (16 tbs), roasted
 Cilantro1/4 Cup (16 tbs), chopped
 Salt To Taste

Directions

Brown ground beef in medium skillet.
Drain.
Add onions; cook until tender.
Season with salt and pepper to taste.
Sprinkle 2 tablespoons cheese onto each of four tortillas; cover with ground beef mixture, pepper strips, cilantro and remaining cheese.
Top with remaining tortillas.
Cook, in batches, in nonstick skillet over medium heat about 4 minutes or until cheese is melted, carefully turning after 2 minutes.
