Roasted Beets With Orange And Fresh Mint Recipe
Ingredients
2 bunches beets, trimmed (if the beets are very small, leave them whole; if they are large, quarter them)
2 tablespoons olive oil
3 tablespoons orange juice
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
Salt and pepper
OPTIONAL INGREDIENT
2 teaspoons fresh mint, finely chopped
Directions
1. Preheat oven to 400° F.
2. Lightly rub the beets with about 1 tablespoon of the olive oil. Place them in the oven on a roasting pan and cook for about 1 hour, or until they can be pierced with a fork.
3. Combine the orange juice, vinegar, remaining olive oil, and mustard, and place in a small pan and bring to a boil.
4. Remove the beets from the oven and peel them when they are cool enough to handle. Place them in a bowl.
5. Pour the orange juice mixture over the beets. Add salt and pepper to taste and the fresh mint, if desired.
