1. Cut off the edge of the beet, wrap it in a piece of foil, roast it and then just peel them off.
2. In a bowl, place yogurt, add mayonnaise, curry powder and olive oil and whisk it together.
3. Add the minced garlic and cilantro, mix it and let it sit for 30 minutes.
4. Pour it all over the roasted beet and serve it as a side. It can also be used as a salad and the dressing can be served by pouring over baked potatoes as well.
