Roast Wild Duck And Rice Stuffing Recipe
Ingredients
| Wild rice | 2 Cup (16 tbs) | |
| Butter | 1/2 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Sage | 1/2 Teaspoon | |
| Thyme | 1/4 Teaspoon | |
| Melted margarine | 1/4 Cup (16 tbs) | |
| Onion | 2 Teaspoon, grated | |
| 1 wild duck | ||
| Bacon slices (opt.) | ||
Directions
Cover rice with warm water.
Soak for 1 hour; drain.
Bring 4 cups water to a boil in top of double boiler; add rice, butter and salt.
Cook, covered, for 2 hours.
Drain; fluff rice by shaking pan over low heat for 10 minutes.
Add pepper, sage, thyme, margarine and onion to rice.
Rub inside of duck with salt.
Fill with rice stuffing.
Rub outside of duck with small amount of salad oil; lay bacon slices over breast, if desired.
Place in roasting pan.
Bake at 325 degrees until ten- der and browned.
Baste with pan drippings occasion- ally during baking.
