Roast Pork (Maiale Arrosto) Recipe

Directions
Make good sized incisions into the loin and insert a slice of garlic, minced onion mixed with oil and marjoram and a couple of rosemary leaves.
Rub the meat with salt and pepper and sprinkle with crushed bay leaf.
Place loin in a baking dish and pour a little water in the bottom of the pan.
Bake in a 375°F (190°C) oven for about 2 1/2 hours.
