Roast Loin Of Pork Recipe
Ingredients
2 lb. pork
1 tsp. salt
1 oz. lard
Directions
Boil water in a pan, place the loin in it, skin downward, and boil for a few mins.
Having taken it out of the water, score skin with knife, if possible in the same direction as the ribs; then salt the meat except the skin.
Melt the fat in a pan, place in the meat, taking care to leave the crackling uppermost; then roast until crisp.
Pour a little water onto the fat remaining in the pan, boil well, and pour this gravy round the sliced pork when serving.
