Ingredients

 
1 5-lb. shoulder of lamb
 
Salt and pepper to taste
 
Garlic salt to taste
 
1 tsp. oregano
 
1 sm. can tomato sauce
 
1 c. consomme

Directions

Brown lamb well in small amount of fat on all sides in heavy Dutch oven.
Salt and pepper lamb; sprinkle with garlic salt and oregano.
Add tomato sauce and consomme.
Reduce heat; simmer, covered, for 2 hours and 30 minutes or until tender, turning lamb frequently.
Remove lamb to platter.
Make gravy from pan drippings, if desired.
