Roast Cornish Hens Recipe

Ingredients

 
4 1 -pound Cornish hens
 
4 cups stuffing
 
1/2 cup cranberry-orange relish
 
1 tablespoon honey

Directions

Stuff Cornish hens.
Secure cavity with wooden picks.
Mix cranberry-orange relish and honey in small bowl.
Arrange hens breast side down and at least 1 -inch apart, in (12 x 8-inch) utility dish.
Brush hens with glaze.
Cover with waxed paper.
Microwave 12 to 15 minutes on HIGH, rotating dish once if necessary.
Turn hens over so that breast sides are up and outside edges are reversed to inside of dish.
Brush with glaze.
Cover with waxed paper.
Microwave 15 minutes on HIGH, or until internal temperature of thickest part of inside thigh muscle registers 175°.
Let stand 7 minutes, tented with aluminum foil.
If desired, serve on bed of wild rice, garnished with green beans and spiced peaches.
Note: Do not use meat thermometer in Microwave oven.
