Roast Cornish Hen With Mango Sauce Recipe
Ingredients
2 Cornish hens (1 1/4 pounds each), cut into halves
1/4 teaspoon each salt and pepper
Sauce:
2 small mangoes, pared and pitted
1/4 cup each lime juice (no sugar added) and water
2 teaspoons granulated sugar
1/8 teaspoon ground allspice
2 tablespoons unsalted margarine, cut into pieces
2 teaspoons orange marmalade
Directions
To Prepare Hens: Preheat oven to 400°F.
Place hen halves on rack in roasting pan; lift up skin and season each half with salt and pepper.
Replace skin and roast hens until tender, 25 to 30 minutes.
To Prepare Sauce: In blender container combine mangoes, lime juice, water, sugar, and allspice and process until smooth.
Transfer mixture to small saucepan; add margarine and marmalade and cook over low heat, stirring constantly, until margarine melts and mixture is heated.
To Serve: Remove and discard skin from hens.
Place hen halves skin-side up on rack in broiling pan; broil 2 to 4 inches from heat source until browned and crisp, about 1 minute.
Remove to serving plate and pour 1/4 of the sauce over each hen half (or serve sauce on the side).
