Roast Chicken With Potatoes Recipe
The roast chicken with potatoes is a simple and cook friendly recipe for chicken. Made with chicken and potatoes simply flavored with lemon juice, paprika and butter, this roasted chicken with potatoes gets done effortlessly and makes a full and satisfying meal when served with salads or vegetables.
Ingredients
1 chicken (about 4 pounds)
Salt and pepper to taste
Juice of 1 lemon
1/4 cup butter
1/4 teaspoon paprika
1 cup water
5 medium potatoes, pared
Directions
Season chicken, inside and out, with salt, pepper, lemon juice, butter, and paprika.
Place chicken on a rack in a baking dish.
Bake at 350°F about 1 1/4 hours, or until chicken is tender, basting occasionally.
After the first 30 minutes of cooking, pour in water; add potatoes and baste with drippings.
Turn oven control to 400°F.
Remove chicken to a platter and keep warm.
Turn potatoes over in dish.
Bake an additional 5 to 10 minutes.
