Clean chicken, remove pin feathers, singe, and wipe well.
Chicken may be roasted with or without stuffing.
If no stuffing is used, leave a Bouquet of parsley and thyme in the cavity while roasting.
Sew up chicken, truss, and rub well with oil or butter.
Preheat oven to 400 F. and roast chicken, basting often allowing 15-18 minutes per pound.
Chicken may also be cooked in a slow oven (300 F.) without basting, allowing 25 minutes per pound.
